The ancient art of noodle pulling is a craft that’s long been practiced in China. The handmade noodles, compared to the mass produced version, turn out very fresh and have more elasticity, which makes all the difference in a dish. Now we’ve never pulled our own noodles before, but we’re sure skipping with the dough isn’t part of this age-old tradition noodle pulling.
